Romesco Sauce

My favorite way to eat Romesco Sauce is on pasta, or as a pizza sauce.  But our kids like it best with cheese ravioli!  It would also be a great dip for grilled cheese or toasted baguettes, as a base for a soup, on a crudite platter, or so many other things.  I’ve drizzled it over roasted green beans and it’s delish!  It takes just minutes to prepare and it can be made completely in a food processor.
Check out the yummy Smoked Paprika spice I got from The Stirring in Correctionville–which is the most adorable coffee shop you’ll ever visit!!  If you haven’t stopped, you definitely should!
I have also been obsessed with Trader Joe’s, so you’ll see a few of their products below as well.  You can certainly buy these ingredients at your normal grocery store.  Enjoy!




Romesco Sauce

1 10 oz jar roasted red bell peppers, drained
1 14 oz can diced tomatoes (do not drain)
2 T sliced almonds (or slivered/whole)
1 T tahini (or almond butter)
1 T olive oil
1 T lemon juice
1 large clove of garlic, minced
½ tsp salt
½ tsp smoked paprika
¼ tsp pepper
Combine all ingredients in food processor until evenly blended.
