Caesar Salad

Homemade dressings are the best!  This Caesar Salad has a thick & creamy dressing that is full of flavor.  I’m pretty particular (okay, very particular…) about how I like my Caesar dressing, and this recipe is my absolute favorite way to enjoy it.  The recipe is below the pictures.  Enjoy!


Caesar Salad

½ c mayonnaise
¼ c parmesan cheese
1 T lemon juice (or about half of a squeezed lemon)
½ tsp anchovy paste
½ tsp mustard
½ tsp worcestershire sauce
1/8 tsp fresh cracked pepper
1/8 tsp salt
1 small clove of garlic, minced
1 bag of romaine lettuce (or kale with the stems removed)
Toppings, as desired
Whisk all ingredients except the romaine lettuce together in a large salad bowl. 
Add the romaine and mix until coated (reserve a little dressing to drizzle on top if desired)
Add cooked chicken or shrimp, cherry tomatoes, croutons, parmesan shavings, sliced lemons, avocado, or whatever toppings you enjoy.  Serve immediately!
